What is it about fresh summer berries? Their gorgeous deep red, purple and pink colors? That sweet juiciness that just doesn’t even compare to off-season berries? Even the smell of summer berries just can’t be beat. It’s an amazing combination of all the things, and when June rolls around we go berry-crazy! This Berry, Basil and Goat Cheese Flatbread with Balsamic Glaze is a recipe you’ll want to try ASAP.
So, back to this awesome Berry, Basil and Goat Cheese Flatbread with Balsamic Glaze. The sweet berries, tangy balsamic and creamy goat cheese combine to create an amazing topping for a flatbread. You could cut this into small pieces and serve it as an appetizer at a summer party, or make this an easy and light lunch. Either way, you’ll want to make it again and again!
To keep this simple and quick, I’ve started with a prebaked flatbread crust. There are lots of options available, usually by the deli department of the grocery store. Light, whole wheat, low-carb…choose the option you like best, or bake your own crust using a pizza dough recipe. Sometimes I make pizza dough in my bread machine, but when I’m pressed for timt, I like this one over at All Recipes.
Preheat the oven to 450° F. Place the flatbread on a sheet pan and brush or mist the crust lightly with olive oil. Wash and pat dry the berries and basil. Slice the strawberries into thin circles. Then chop, slice or snip the basil into thin strips. I used the Kitchen IQ Pizza and Herb (2 in 1) tool to slice the basil. It has 2 blades to chop herbs, and can also be used as a pizza cutter. It’s so easy to use and dishwasher safe…2 important factors for me when it comes to kitchen tools!
Arrange the berries on the crust and add the chopped the basil. Then sprinkle the crumbled goat cheese on top and bake for 5 minutes. While the flatbread is baking, make the balsamic glaze. Just cook the vinegar over medium-high heat, stirring frequently, until it reduces and thickens. Remove from stove to cool slightly.
Once the flatbread is out of the oven, drizzle with the balasamic glaze. Slice into pieces and serve!
