Today I'm sharing a breakfast recipe that I think you will love. Unlike most recipes I've shared so far, Bacon and Egg Corn Muffins isn't a recipe we've been making for years. Rather it's something my mom and I decided to try in an effort to change up the weekday breakfast routine. Zucchini Cakes
These Zucchini Cakes are one of my all time favorite recipes. My mom has been making them for a long, long time and every time we have them, I fall in love all over again. They're a perfect side dish with grilled chicken or fish, or sometimes we'll just make them to eat for lunch.
