Happy Friday! Who’s ready for the weekend? I know I am. We are going to celebrate my littlest guy’s 3rd birthday, hang out with family and friends and try to catch up on some projects around the house. Exactly the kind of weekend I love.
Here’s what I’m not loving lately though…we’ve been super busy. Constantly on the go. And when the schedule gets hectic, the first thing to go – always – is making time for myself. I’ve always loved to get up early and get a workout or a jog in before the day gets crazy. But we’ve been so busy, and I’ve been so tired that I’ve just been skipping it. But then guess what…I feel even more tired and overwhelmed and just yuck!
So I’d really like to recommit to exercising and focusing on healthy eating. As a general rule, I try to feed my family healthy and nutritious meals. I try to use fresh, whole foods whenever possible and make a lot of things from scratch. But I’ll admit we’ve been having extra summer treats, eating on the run (summer baseball kept us running!) and I’ve been too busy to do too much meal planning and prepping ahead.
Now, just because I’m going to get a little more focused on health and exercise, certainly doesn’t mean meals are going to get bland and boring around here! So today I’m sharing some of my favorite clean eating recipes.
checkOUT: Clean Eating Waffles
I love making home made versions of convenience foods. So when I found this recipe from Olena at iFOODreal for waffles you can make, freeze and reheat, I was super excited. My kids love store-bought frozen waffles. But I know they aren’t the healthiest. Make a big batch of these waffles and pop them in your toaster in the morning, just like Eggos, and you can feel good about feeding them to your kids (and yourself!)
checkOUT: Chopped Veggie Salad
When lunchtime rolls around, I always find myself wishing something healthy and delicous would just magically appear in my fridge. Making a salad, or stirfry or a wrap is not hard to do, or even very time-consuming. In fact, I have a list of great quick and easy meals that are perfect for lunch! But still, some days having something just ready to go makes life easier for sure. And that’s the philosphy behind this salad from Kristy, of The Wicked Noodle…chop, chop chop once, and eat for days!

These Fish Tacos with Peach and Strawberry Salsa just scream summer to me. I absolutley love fish tacos and they are one of my favorite things to order when out for dinner. Emily from My Healthyish Life nailed it with this recipe…simple, nutritious and beautiful too! And it’s Whole 30 approved!

checkOUT: Watermelon Raspberry Slushies
Now this is part of the checkIN and checkOUT post where I link to an amazing cocktail. Eating clean and being healthy does not really include cocktailing. However, I like to follow an 80/20 rule. If you are doing what you are supposed to be doing 80% of the time, then little treats and splurges are fine 20% of the time. Would you agree? So I’m going to share with you Averie’s Watermelon Raspberry Slushie recipe from her website Averie Cooks. It would be delicious all on it’s own, but I’m just saying…kicking it up a notch with a shot of vodka would be incredible! 20% people!

All of these are so amazing! We’ve been eating a lot of waffles for breakfast around here. So great with berries!

The waffles look tasty! I have batter for zucchini pancakes in the fridge right now and plan on doing the same thing as you. It will be nice to have them to pop in the toaster for the next few day’s breakfasts. I’m just hoping they are good though…as it’s a new recipe. 🙂

Lord! All of those sound delicious, but especially those slushies and fish tacos sound the best to me! I’ll definitely be trying them out at some point. The best thing about them? They’re healthy so I won’t feel bad about eating them. Great post!
