Need a quick, delicious breakfast that’s not heavy on carbs? Then eggs are the obvious answer. And this Crustless Quiche recipe makes having eggs easy, even on the busiest of mornings!
So many grab & go breakfast options are starchy – bagels, cereal, granola bars, muffins. All delicious, yes. All super easy to take as you run out the door, yes. But all the healthiest choices, not really. Especially if you’re trying to bump up protien and veggies in the morning. So often our diets are low on protein and veggies, simply because they take more work to prepare. However, this recipe is a game-changer when it comes to starting your day out right.
I started making this Crustless Quiche when I was doing Weight Watchers, years ago. I took a look at lots of different recipes and made tweaks until I came up with a combination I loved. Then, recently I tried the Whole 30, an eating plan designed to overhaul your diet and eliminate food cravings like sugar and caffeine. (You can read more about the Whole 30 on their website.) While doing the Whole 30 I decided to revisit my Crustless Quiche recipe, but tweak it again to meet the plans stringent guidelines, like no dairy.
The result: still delicious! I mean, I love cheese. And my policy is all things in moderation, so I’d add a little shredded cheddar or jack (about 1/3 cup) back into this recipe if not doing Whole 30. But really, you won’t even miss it.
A Tip!
Make it your own! I love Crustless Quiche with broccoli and ham, but use what you love. Spinach, peppers, asparagus, onion, bacon…any and all of the above would be delicious in this recipe. I really haven’t tried a combination I didn’t like yet.
This Crustless Quiche only takes about 10 minutes to prepare and 30 minutes to bake! I’ll make one when I have a little time and then eat it for breakfast or lunch for the next few days. It’s a no-brainer recipe for when you’re trying to establish a prep-ahead meals habit.
Making Crustless Quiche
Start by preheating the oven to 350° F. Crack 6 eggs into a medium bowl. If you prefer, you can do 4 whole eggs and 2 whites. This saves some calories, fat and cholestrol, but provides great flavor and many of the health benefits whole eggs provide. Next add a teaspoon of black pepper, and a half teaspoon each of salt and ground mustard. Whisk together until all combined.
Prepare a 9″ pie plate with cooking spray. Dice the ham and broccoli into bite-sized pieces and place on the bottom of the pie plate. A time-saving tip: I often use frozen broccoli and steam it in the microwave before adding it to the pie plate. You can do the same with fresh broccoli, but it may take a few minutes longer to become tender.
Next pour the eggs over the broccoli and ham. Pop the pie plate into the oven and bake for about 30 minutes, or until the eggs are set and the center of the quiche is firm. Remove from oven, and allow to cool slightly before cutting. Enjoy all week…easily re-heat a piece of quiche in the microwave!

- 6 eggs
- 1 cup steamed, chopped broccoli
- 1/2 cup diced ham
- 1 tsp. black pepper
- 1/2 tsp. salt
- 1/2 tsp. ground mustard

We’ve made similar quiche recipes, and I always love them. My absolute favourite is made with leftovers from Christmas dinner. It uses the stuffing, pressed into the bottom of the baking dish, as the crust 🙂
