So here’s a great recipe that you can make with the kids for a snack or lunch: Anytime Pizza Pockets! We made these one day last week while the kids were home on April vacation and if you ask them, it was the best lunch they had all week. You start with a can of ready to bake biscuits and fill the pockets with your favorite pizza toppings – I have one plain cheese guy and two pepperoni lovers. Dipping them in some pizza or marinara sauce makes the Anytime Pizza Pockets even better and more fun for the kids.
Years ago, my mom came home from school all excited about one of her students (and this was a rare occurrence because she worked in a tough city school with middle schoolers.) In a sea of bored, uninterested kids, she had this one student who was really into cooking and actually enjoyed her Home Ec class. So when he decided to develop and enter his creation into a recipe contest for kids that my mom had mentioned, she was so happy…and guess what? He won! With this Anytime Pizza Pocket recipe! So of course my mom had my brother and I try making these, and now watching my kids make them too is just awesome.
When I have my kids working in the kitchen, I find it’s easier to set them up at the kitchen table. To make these, all they’ll need is a cookie sheet. You just take a biscuit, flatten it out into a wide, thin circle, and place the cheese and pepperoni in the center. Then fold the dough up all the way around to create the pocket, or fold it in half to create a small calzone shape. Either way, pinch the edges together to seal in the cheese. Then you just bake them according to the package directions and serve with some pizza sauce for dipping…I just warm up the sauce in the microwave.
A Tip!
Buy an extra can of biscuits, and while your kids are making their Pizza Pockets, make another batch to bake and freeze. By the time they’re done eating, you’ll have made a great snack or lunch that you can easily serve afterschool, on a hectic day, or Anytime!
By the way, you should definitely make a couple for yourself too…add some veggies or try different kinds of cheese. I love them with spinach and broccoli tucked inside. Do not leave all the fun for the kids!
- 1 can ready to bake biscuits
- 4 oz. mozzerella cheese, cut into 8 pieces*
- 16 small pepperoni slices
- pizza or marinara sauce for dipping
- Preheat oven to 350°
- Press each biscuit into a wide, flat circle.
- Place 2 slices of pepperoni and 1 piece of mozzerella in the center of each biscuit.
- Fold the dough up around the meat and cheese, pinching the edges together to seal.
- Place on cookie sheet 2 inches apart and bake according to package directions, about 12-14 minutes or until golden brown.
- Serve with warmed pizza or marinara sauce.

How would it work out to put the sauce inside the pockets? Would that be a hot mess?

Hi Suzi! I think if you did it sparingly, maybe just a tablespoon, it could work. But I do think part of the fun of these pockets is the dipping! If you try it, please share how it worked for you!
