Ready for another great grill recipe? I have already shared two of my mom’s go-to summer side dish recipes: Cheesy Grilled Potato Packets and Grilled Zucchini Tomato Parmesan. Now I’m sharing the easiest one yet…Simple Grilled Potato Packets. These potato wedges are seasoned with just salt, pepper and garlic and are both tender and soft with crispy edges.
I can’t say enough about how much I love using foil wrapped packets to prepare side dishes on the grill. I have grill baskets and pans, but nothing beats the simplicity of using foil…just wrap, grill and serve. It’s a No Muss, No Fuss Method!
You can make individual packets if you’d like, or make one or two big packets, depending on how much space you have on your grill and how you want to serve the packets. Some times it’s fun to each unwrap our own packets. Some times I’ll make one big packet and then place the finished product in a dish to serve.
No matter how you serve them or what you serve them with, it doesn’t get much easier or tastier than these Simple Grilled Potato Packets. They’re a perfect side to pair with fish, chicken, steak or burgers! My favorite thing about them is they don’t require any extra ingredients and they’re done in about 3o minutes.
Making Simple Grilled Potato Packets
First wash 6 medium potatoes, and if you prefer, you can peel them. Next cut each potato into 6 wedges. In a mixing bowl, combine 1/3 cup of olive oil, 1 teaspoon of salt, 1 teaspoon of pepper and 1/2 teaspoon of garlic powder. Add the cut potato wedges to the bowl and toss to coat them with the oil mixture.
A Tip!
Change these up by using sweet potatoes instead of regular. Like spicy? Just add a 1/2 teaspoon of chili powder to the oil mixture!
Place the coated wedges in the center of a piece of heavy-duty foil and seal the edges tightly. Grill the packet over medium heat for about 30 minutes, until the potatoes are soft and tender with some crispy, golden edges. That’s all there is to it! Enjoy!
