When I need a quick, healthy meal, my go-to is usually a salad. But salads can get boring fast. So when I need a quick, healthy meal that’s a little different, I like to make this quick and simple Tuna Fruit Salad. You can use any fruit you like and have this meal ready in about 3 minutes!
Canned tuna is a perfect thing to keep in your pantry for when you need a healthy meal fast. Tuna is a super food, packed with protein, omega-3 fatty acids, and many vitamins and minerals. Just a single serving of tuna contains 80% of the daily protein requirement!
A Tip!
Keep the single serving tuna pouches in your pantry. They are so easy – no draining! and a great way to add lots of protein to your meal.
Tuna can easily become not so healthy if you add lots of fattening mayo or top it with melted cheese. However, when you mix it with some leafy greens, cut fruit and drizzle it with a light and creamy yogurt dressing, you have yourself an awesome, nutritious meal!
Start by placing some leaf lettuce in a bowl or on a small plate. Next add about a cup of cut fruit. You can use whatever fruit you like. In the summer I like watermelon, berries and kiwi! Then just add the tuna. Finally, drizzle on a simple yogurt dressing. How easy is that? Enjoy!
- For Salad:
- 1 c. leafy greens
- 1 c. cut mixed fruit
- 1-2.6 oz pouch of tuna
- For Dressing:
- 2 T. vanilla yogurt
- 2 tsp. orange juice
- dash of cinnamon
- Place some leaf lettuce in a bowl or on a small plate.
- Add about a cup of cut fruit.
- Place the tuna on top of the fruit.
- To make the dressing, combine the yogurt, juice and cinnamon in a small bowl and whisk to combine. Drizzle on top of salad.
